Coconut Macaroons

I always love to help my aunt baked macaroons when I was younger. Now, baking/cooking is already a hobby. I just love eating and trying things on my own. I probably soon open my own shop, what do you think? Hehe! I’m dreaming.

This recipe is not the same as what we used to make before but ingredients are most likely the same. There are many ways in making macaroons, will share the other one I have soon.

Ingredients

  • 1 can condensed milk
  • 1 egg white, whipped
  • 10 ml vanilla extract
  • 8 ml almond extract
  • 1 pack desiccated coconut
  • raisins

Directions

  1. Preheat oven 325 degrees F. Line baking sheets with foil. Set aside.
  2. In large bowl, combine condensed milk, egg white, extracts and coconut; mix well. Drop by rounded teaspoonfuls onto prepared baking sheets; slightly flatten each mound with a spoon. Add raisin/s at the center.

3.   Bake 15 to 17 minutes or until lightly browned around edges. Immediately remove from baking sheets (macaroons will stick if allowed to cool); cool on wire racks. Store loosely covered at room temperature.

Colon Day with Mama

I went home very late yesterday. Mama & I went to Colon St. just after my dentist appointment. We had fun shopping, got good deals for her summer outfit. Mom has been very busy with summer outing this year. I am happy she’s enjoying it, makes her look younger. I didn’t take photos when we were on street, I wish I had. We went inside Gaisano Metro Colon for late lunch and stayed there for hours talking. I was supposed to buy my own per of shoes but there were too many people. So, we decided not to, pose for a few shots and ate.

We’re just like sisters, huh! :)

We had a great time. We seldom see each other even if we are living in the same island. Thanks Ma!

False Alarm

I was waiting for my water to boil; it took very long so I looked at the stove, was not on! Initial reaction was “omg! I dont have gas anymore? After 17 months?”. Haha! Funny, still shock even it has been 17 months and counting.

Now, I am still waiting for the water to boil. I just forgot to turn the stove on.

One Afternoon

On our way home this afternoon…

We saw very tiny yellow flowers slowly falling from the trees. It was such a lovely view, we stopped and took some photos. And as the wind blows, we smelled a sweet baby-like scent. One of those few lovely, stress-free walks going home.

Going Wireless

Recently, my cable company installed my internet. I shared how happy I was when it was finally working in my previous post. Having multiple devices at home that needs internet to fully function would require a regular wireless router. So, I got one for myself few days back, I never waited for the next day, I set it up myself. Is pretty easy though, all you need to do is follow the setup guide.

I bought a TP-Link Wireless Router.

That night, I discovered that Lappie’s my laptop ODD (Optical Disk Drive) was no longer working and I needed that to setup the wireless router. But then I realize I had internet, I can download, I was feeling very technical. I wasn’t really sure they have a support site but I was hoping. This was actually my first TP-Link device, luckily they have. You can find them here. I downloaded the easy setup utility, connected cables (cable modem to wireless router to computer) followed the setup utility and viola! Is all ready. Tested my wireless network using Navi my LG phone, it was a success and cables were all over. Yikes!

When it was finally working, had to setup everything like how I wanted it to be, not totally going wireless but less visible cables.

  • Xbox directly connected to the wireless router;
  • while Lappie and Navi have wireless connection.

Xbox connects perfectly to the internet. Was streaming criminal minds while checking FB messages with Navi while Lappie was sitting pretty on the white table at the side, not seen though.

That’s it for me today. If I learn anything new as I go on with using these technology at home, I will sure share them to you.

Slice & Share

Working hard doesn’t mean you can’t have fun at all. My team manage to do both and all deserves to enjoy every sweet slice of it. Good job team for a great performance. I know this was long overdue but is better late than never. :)
